When you dunk a cookie, you change everything about it: the texture, the flavor, right down to the chemical composition. As Matthew Harting, a chemistry professor explained, the secret is a group of chemical additives called emulsifiers. This delicious magic is taken to the next level when say when a chocolate chip cookie is dunked in milk the emulsifiers from both substances interact on your tongue. Milk calms down the intense sweetness and the perfect creaminess-to-cookie flavor ratio. When it comes to dunking, tea drinkers say they rate on the top of the list. When dunking in hot tea there is a risk the cookie will get soggy if left too long, and break off ending up as mush at the bottom of your cup. So there is a learning curve of leaving your cookie in for just a few seconds.
