The debate is an endless one, gas or charcoal. You may have your favorite , but there seems to be 2 sides to every coin in this situation. Cooking on a gas grill is more convenient than cooking with charcoal, turn on the propane and your off to the races, but scientifically speaking, it creates less flavorful food, but this is debated with those using gas. “Within flavor, we have taste compounds and we have aroma compounds,” says Gavin Sacks, a professor at Cornell University. What charcoal brings is aroma compounds, the other half of the power couple is flavor. In fact, aroma is the star. Anything else you perceive while eating—that smoky deliciousness, for example—is courtesy of aroma. Aromas are released when you bite into your food, the smell travels up your nose. As mentioned there are two sides to every grilling coin and the internet has lots of articles giving great reasons why gas is better, check those out and you decide!! Many chefs do prefer gas.
