Spam Restaurant Month was created several years ago, when restaurants started putting some really interesting spins on Spam a brand of canned cooked meat made by Hormel Foods Corporation. It was first introduced in 1937 and gained popularity worldwide after its use during World War II. The most intriguing concoction may very well be The Duck Inn’s Spam Mai Thai, that sweet and salty version of the famous tropical cocktail, and yes it’s served in a can … a real Spam can. Don’t worry — there won’t be any chunks of meat floating around in your drink. This great end of summer drink is infused (rather than mixed) with the porky product. The drink is made by mixing lard with Spam and two different types of rum, and let that mixture sit overnight. The following day it’s strained, infused with fresh pineapple juice, lime juice, almond syrup and bitters. As a self-proclaimed Spam-lover called the drink “something magical!”.
